Run by ‘Sustainable Urban Gin’ new boys Jim and Tonic, this 100L Dalston Gin Distillery takes pride of place alongside the beer brewery on the lower ground floor near the restaurant area. The copper still named ‘Kirby’ gives guests an insight into gin production and everyday work that goes on in an urban craft distillery in the heart of Dalston in the Borough of Hackney in East London.
Staying true to their ethos, Jim and Tonic distils its gins onsite using sustainable production methods to reduce waste water and heat energy. The distillery bottles each gin by hand and uses eco-friendly cane fibre labels using vegetable-based inks.
